Frequently Asked Questions

Why are the garbanzo beans drained and rinsed before blending?

The notes explain that well-rinsed and drained garbanzo beans give a smoother texture. Residual canning liquid can add a slightly starchy or metallic taste and thin the hummus more than desired.

Why are the chocolate chips stirred in by hand rather than blended with everything else?

Adding the ? cup (80 ml) dark chocolate chips by hand after blending keeps them whole and evenly distributed, giving a cookie-dough-like texture. Blending them in would break them up and turn the entire hummus a chocolatey brown.
