Description

Paneer Bhurji is a quick and flavorful scrambled cottage cheese dish, rich in protein and perfect with rice or bread.


Ingredients

  • Cottage cheese or Paneer- 250gm, crumbled
  • Onion- 1 large, blanched and pureed
  • Tomato- 2 med, blanched and pureed
  • Cashew paste- 1 tbsp
  • Green chilli- 1, chopped fine
  • Ginger-garlic paste- 1tsp
  • Coriander-cumin powder-1 tsp
  • Paprika powder- 1/2 tsp
  • Bay leaf- 1
  • Salt- to taste
  • Sugar- 1/2 tsp
  • Turmeric or haldi- 1/4tsp
  • Garam masala- 1/4tsp
  • Milk- 1/2 cup
  • Kasuri methi- 1/2tsp
  • Oil or Clarified butter- 2tbsp
  • Coriander leaves to garnish


Instructions

  1. Heat 2 tablespoons of oil or ghee in a thick-bottomed pan over medium heat.
  2. Add 1 bay leaf and sauté for a few seconds until fragrant.
  3. Add 1 teaspoon of ginger-garlic paste and fry until the raw smell disappears, about 1 minute.
  4. Stir in the pureed onion and fry for another minute.
  5. Add 1 tablespoon of cashew paste and mix well.
  6. Stir in the pureed tomatoes and cook for 2-3 minutes until the oil starts to separate from the mixture.
  7. Add the chopped green chilli and salt to taste, stirring well.
  8. Fold in the crumbled paneer and mix gently to combine all ingredients.
  9. Cook for another 2-3 minutes, stirring occasionally, until the paneer is heated through.
  10. Garnish with fresh coriander leaves before serving.

Notes

Pureed onions can be replaced with chopped onions for a different texture. This dish pairs well with rice or any type of bread. Adjust the number of green chillies to control the spice level.
