This Super Simple Summer Avocado Salad combines ripe avocados with fresh tomatoes, onion, and a hint of lime for a refreshing and healthy dish perfect for warm weather.
Ingredients

- 2 ripe avocados
- 2 tomatoes
- 1/2 onion
- 1 clove garlic
- 1 tbsp finely chopped fresh parsley
- Salt, to taste
- Pepper, to taste
- Some cottage cheese
- Olive oil
- 2 tbsp lime juice
- 1 tbsp apple cider vinegar
Instructions
- Wash the avocados, peel them, remove the stones, and chop the flesh into cubes. Sprinkle the cubes with lime juice to prevent browning.
- Wash the tomatoes and cut them into cubes. Combine the tomatoes with the avocado cubes in a large bowl.
- Finely chop the onion, garlic, and parsley. Add them to the bowl with the avocado and tomatoes.
- Season the mixture with salt and pepper to taste. Add a drizzle of olive oil and the apple cider vinegar.
- Gently toss all the ingredients together until well combined.
- Serve the salad with a dollop of cottage cheese on top for added creaminess.
Notes
For a creamier texture, mix in more cottage cheese. This salad is best served fresh but can be stored in the refrigerator for up to a day. Use ripe but firm avocados for the best texture. You can substitute lime juice with lemon juice if preferred.
