- 100g (2/3 cup) spelt flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- Pinch of salt
- 1 egg
- 100 ml (1/3 cup + 2.5 tbsp) milk
- 2 tbsp raisins
- 1 apple, very thinly sliced
- Oil, for baking
- Icing sugar, for dusting (optional)
Instructions
- In a large bowl, mix the spelt flour, baking powder, ground cinnamon, and a pinch of salt.
- Add the egg and milk to the dry ingredients and whisk until the batter is smooth and well combined.
- Gently fold in the raisins.
- Heat a small amount of oil in a non-stick skillet over medium heat.
- Pour a ladleful of batter into the skillet and place a few apple slices on top.
- Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 2-3 minutes, until golden brown.
- Repeat with the remaining batter, adding more oil to the skillet as needed.
- Serve warm, dusted with icing sugar if desired.
Notes
These pancakes are naturally sweetened with apples and raisins, making them a healthier option. You can omit the icing sugar for a completely sugar-free breakfast. Serve with a dollop of yogurt or a drizzle of maple syrup for extra flavor. Store leftovers in an airtight container in the fridge for up to 2 days.
