Description

These spelt apple pancakes are a delightful blend of apple pie flavors with cinnamon and raisins, perfect for a cozy Sunday morning breakfast.


Ingredients

  • 100g (2/3 cup) spelt flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 1 egg
  • 100 ml (1/3 cup + 2.5 tbsp) milk
  • 2 tbsp raisins
  • 1 apple, very thinly sliced
  • Oil, for baking
  • Icing sugar, for dusting (optional)

Instructions

  1. In a large bowl, mix the spelt flour, baking powder, ground cinnamon, and a pinch of salt.
  2. Add the egg and milk to the dry ingredients and whisk until the batter is smooth and well combined.
  3. Gently fold in the raisins.
  4. Heat a small amount of oil in a non-stick skillet over medium heat.
  5. Pour a ladleful of batter into the skillet and place a few apple slices on top.
  6. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 2-3 minutes, until golden brown.
  7. Repeat with the remaining batter, adding more oil to the skillet as needed.
  8. Serve warm, dusted with icing sugar if desired.

Notes

These pancakes are naturally sweetened with apples and raisins, making them a healthier option. You can omit the icing sugar for a completely sugar-free breakfast. Serve with a dollop of yogurt or a drizzle of maple syrup for extra flavor. Store leftovers in an airtight container in the fridge for up to 2 days.
