Ingredients

Scale
  • 32 ounces of cream cheese, softened
  • 1 1/4 cup of sugar
  • 4 eggs
  • 3 tablespoons of lemon juice
  • 1 teaspoon vanilla
  • 1 1/4 cup of graham cracker crumbs
  • 1/4 cup butter, melted

Instructions

  1. For the crust, in a medium bowl combine graham cracker crumbs and butter. Press into the bottom of a round spring form pan and freeze.
  2. For the filling, beat softened cream cheese and sugar on medium high for three minutes. Add eggs, one at a time, beating after each addition. Stir in lemon juice and vanilla. Bake at 350 degrees for 60 minutes. Let cool to room temperature, and then chill in the refrigerator for 4 hours before serving.
  3. Suggestions for dressing up your cheesecake: sugared cranberries, raspberry coulis, and/or chocolate shavings/curls.
