Ingredients
- 1 cup chicken broth
- 1 cup Rioja wine (any dry red)
- 1 clove garlic, minced
- 1 tablespoon balsamic vinegar
- 1 teaspoon thyme
- Dash of pepper
- Salt to taste
- Cherry tomatoes
- Fresh mozzarella balls
- Fresh basil leaves
Instructions
- In a saucepan over medium-high heat, reduce the chicken broth to 1/4 cup.
- Add the Rioja wine, minced garlic, balsamic vinegar, thyme, pepper, and salt to the reduced broth.
- Continue to cook the mixture until it reduces to 1/2 cup, stirring occasionally.
- Arrange cherry tomatoes, fresh mozzarella balls, and basil leaves on a serving platter.
- Drizzle the wine reduction sauce over the arranged tomatoes, mozzarella, and basil just before serving.
Notes
For a more intense flavor, let the reduction cool slightly before drizzling over the cheese and tomatoes. Use fresh, high-quality mozzarella for the best taste. Store any leftover reduction sauce in an airtight container in the refrigerator for up to a week. If you prefer a thicker sauce, continue reducing until it reaches your desired consistency.
