Description

A light and refreshing appetizer featuring juicy tomatoes, fresh mozzarella, and pungent basil, all glazed with a rich Rioja wine reduction sauce.


Ingredients

  • 1 cup chicken broth
  • 1 cup Rioja wine (any dry red)
  • 1 clove garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon thyme
  • Dash of pepper
  • Salt to taste
  • Cherry tomatoes
  • Fresh mozzarella balls
  • Fresh basil leaves

Instructions

  1. In a saucepan over medium-high heat, reduce the chicken broth to 1/4 cup.
  2. Add the Rioja wine, minced garlic, balsamic vinegar, thyme, pepper, and salt to the reduced broth.
  3. Continue to cook the mixture until it reduces to 1/2 cup, stirring occasionally.
  4. Arrange cherry tomatoes, fresh mozzarella balls, and basil leaves on a serving platter.
  5. Drizzle the wine reduction sauce over the arranged tomatoes, mozzarella, and basil just before serving.

Notes

For a more intense flavor, let the reduction cool slightly before drizzling over the cheese and tomatoes. Use fresh, high-quality mozzarella for the best taste. Store any leftover reduction sauce in an airtight container in the refrigerator for up to a week. If you prefer a thicker sauce, continue reducing until it reaches your desired consistency.
