Scale
- 1 1/2 cups White Basmati Rice
- 3 cups Water
- 1 lb Shrimp (fresh or frozen)
- 1 tsp Ghee or Butter
- 2 tbsp Vegetable Oil
- 3 pods Green Cardamom
- 3 Cloves
- 1/2 inch Cinnamon stick
- 1 medium Onion, sliced
- 1/2 inch Ginger, grated
- 1 tsp Salt, or to taste
- 1/2 tsp Turmeric Powder
- 1/2 tsp Red Chili Powder
- 1/2 cup Peas (optional)
- Fresh Cilantro for garnish
Instructions
- Soak the rice in water for 30 minutes. If using frozen shrimp, defrost and rinse. Set aside.
- In a deep pot, heat the ghee and vegetable oil over medium heat. Add the cardamom, cloves, and cinnamon, and let them flavor the oil for about a minute.
- Add the sliced onion and sauté until golden brown, about 5-7 minutes.
- Add the grated ginger and sauté for another minute until fragrant.
- Stir in the turmeric powder, red chili powder, and salt. Mix well.
- Add the shrimp and sauté for 2-3 minutes until they begin to turn pink.
- Drain the soaked rice and add it to the pot along with the peas (if using). Stir gently to combine.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
- Garnish with fresh cilantro before serving.
Notes
For a more intense flavor, use fresh shrimp instead of frozen. This dish can be made ahead and stored in the refrigerator for up to 2 days. Reheat gently before serving. You can add vegetables like peas or carrots for extra nutrition. Adjust the spice level to your preference by altering the amount of red chili powder.
