Description

A creamy, tangy Greek Yogurt Caesar Dressing perfect for tossing with kale, frisée, and fennel for a guilt-free salad.


Ingredients

  • 6-ounce single serving of Fage Total 0% Greek Yogurt
  • 1/4 cup grated Parmesan cheese
  • 2 to 4 anchovy fillets, minced
  • 2 cloves of garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lemon

Instructions

  1. In a medium bowl, combine the Greek yogurt, Parmesan cheese, minced anchovy fillets, minced garlic, Dijon mustard, and Worcestershire sauce.
  2. Whisk the ingredients together until smooth and well combined.
  3. Add the lemon juice and whisk again until the dressing reaches your desired consistency.
  4. Season with salt and freshly ground black pepper to taste.
  5. Taste the dressing and adjust any ingredients as needed to suit your preference.
  6. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

For a thicker dressing, reduce the amount of lemon juice. Store the dressing in an airtight container in the refrigerator for up to one week. If you prefer a more intense anchovy flavor, use 4 fillets instead of 2. This dressing pairs well with hearty greens like kale and frisée.
