This German Plum Kuchen is a light and flavorful cake, featuring a buttery batter topped with juicy red plums and a hint of lemon.

- 1/2 cup butter
- 1 cup sugar
- 2 large eggs
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 lb red plums, pitted and sliced
- Fresh lemon juice, to squeeze over the cake before baking
Instructions
- Preheat the oven to 350°F (175°C).
- Butter a 9-inch baking pan, preferably a Pyrex dish.
- Cream together the butter and sugar in a mixing bowl until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, sift together the flour and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a creamy batter. Be careful not to overmix.
- Spread the batter evenly into the prepared baking pan.
- Arrange the sliced plums over the top of the batter, pressing them slightly into the batter.
- Squeeze fresh lemon juice over the top of the plums.
- Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean and the top is golden brown.
- Allow the cake to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For best results, use ripe but firm plums. The cake can be stored at room temperature for up to 2 days or refrigerated for up to 5 days. Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
