Frequently Asked Questions

The recipe says “1 cup of flour minus two tablespoons” — why not just use a slightly smaller measure?

This is the recipe as the Christiansen family has made it for generations — that exact 14-tablespoon flour measurement (1 cup minus 2 tbsp, roughly 110 g) is intentional and keeps the brownies dense and fudgy rather than cakey. Using a full cup of flour would add too much structure and change the classic texture.

Why is the pan specified as 9×11 glass rather than metal?

The recipe calls for a buttered 9×11 glass pan baked at 325°F for 32 minutes. Glass conducts heat more slowly and evenly than metal, which helps these dense, chocolatey brownies cook through without over-baking the edges — important when the recipe uses 4 oz of unsweetened chocolate and no leavening to lift them.
