Ingredients

Scale
  • 1 medium potato
  • 1 tbsp roasted groundnuts
  • Salt to taste

Tempering:

  • 1 tbsp oil
  • 1 green chilly
  • 1/2 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp. sugar
  • 1/4 tsp lemon juice
  • 1/4 tsp. fennel seeds
  • Few curry leaves and coriander leaves

Instructions

  1. rinse beaten rice in a strainer and keep it aside for 5-10 minutes.
  2. Peel and chop onion, green chilly and potato into very fine slices.
  3. Heat oil and splutter mustard and fennel seeds.
  4. Add chopped green chilly, onion, potato, curry leaves, salt, sugar, turmeric powder and combine well.
  5. Cover the kadai with a lid and let it cook for 3-4 minutes.
  6. Add soaked beaten rice, lemon juice, combine well and put off the flame.
  7. Garnish it with chopped coriander leaves and serve with a sprinkle of spicy mixture.

Notes

Do not over wash the beaten rice as it may turn soggy and lumpy.
Use medium size beaten rice (not the thin variety) to make this recipe.
You can spruce up your poha with grated carrots or fresh peas. .
