- 200 grams all-purpose flour
- 85 grams caster sugar
- 1 egg
- 80 grams unsalted soft butter
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- Pinch of salt
- 100 grams dark chocolate, cut into small chunks
Instructions
- Preheat your oven to 180 degrees Celsius (356 degrees Fahrenheit).
- In a bowl, sift together the flour, baking soda, baking powder, and a pinch of salt.
- In another mixing bowl, cream the butter with the caster sugar until the mixture is light and fluffy.
- Beat in the egg until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the dark chocolate chunks until evenly distributed throughout the dough.
- Line a baking sheet with parchment paper. Drop spoonfuls of cookie dough onto the prepared baking sheet, leaving enough space between each cookie to allow for spreading.
- Bake in the preheated oven for 10-12 minutes, or until the cookies are golden brown around the edges.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
These cookies can be stored in an airtight container for up to a week. Perfect for enjoying with a cup of coffee during fika. You can substitute dark chocolate with milk chocolate if preferred.
