Instructions

  1. In a food processor, combine the fresh shelled English peas, creme fraiche, grated Pecorino Romano cheese, finely chopped chives, lemon juice, and lemon zest.
  2. Pulse the mixture until it is green and chunky, ensuring that the peas are broken down but not completely smooth.
  3. Spread the pea and chive mixture over slices of seedy bread or crackers.
  4. Garnish with additional grated Pecorino Romano cheese and a sprinkling of fresh purple chive flower petals, if using.

Notes

For a smoother texture, blend the mixture longer. The spread can be stored in an airtight container in the refrigerator for up to two days. Serve chilled or at room temperature. The flower petals are optional but add a lovely visual touch. If you don’t have Pecorino Romano, Parmesan can be used as a substitute.
