Cocoa Coffee Cookies

Enjoy these cookies with a great cup of Italian coffee.
  • 100 g (3½ oz) unsalted butter
  • 100 g (3½ oz- 1 cup) light brown sugar
  • 1 tablespoon milk (or rice milk)
  • 1 organic egg
  • 200 g (7 oz-1 cup) wholemeal Kamut flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 coffee-spoon of instant coffee
  1. Knead the butter with sugar. Add milk. Mix the rest of dry ingredients together, incorporating the mixture of butter and sugar.
  2. Form a ball and let rest in refrigerator for 30 minutes.
  3. Cut into thick slices and give a cylindrical shape.
  4. Bake, in preheated oven, at 180°C (gas 4- 374°F), for 15 minutes.
