So when B&W Quality Growers asked me to come up with an inspiring, creative recipe using their gourmet watercress, I knew exactly the recipe I’d want to share. My Cobb Salad Flatbread Wrap with my homemade Watercress Pesto. It’s a spring and summer favorite. Perfect for picnic lunches or quick and simple dinners.
I’ve always loved the peppery spiciness of watercress. It’s vivid green color and the fact that it’s one of the most nutrient dense of all foods also give it the big thumbs up in my book. If you’re not familiar with watercress, let me school you a bit. It’s low calorie, fat free, cholesterol free, a good source of Vitamins A & C and best of all, tastes good. It’s a total winner.
My watercress pesto takes minutes to make and it’s what brings this delicious wrap together folks. This wrap has all the ingredients of the classic Cobb Salad. Shredded chicken, bacon, hard boiled egg, avocado, watercress, tomatoes, and crumbled blue cheese all tossed in the peppery watercress pesto. It’s a healthy, hearty sandwich that’s loaded with good for you ingredients that will satisfy your hunger, delight your tastebuds and keep you bathing suit ready for summer!
