Description

These chocolate mendiants are a simple yet elegant French treat, featuring dark chocolate discs topped with a delightful mix of raisins, hazelnuts, and candied ginger.


Ingredients

  • 7 oz (200 g) dark chocolate (70% cocoa)
  • 1/4 cup raisins
  • 1/4 cup hazelnuts
  • 1/4 cup candied ginger
  • Various other dried candied fruits (optional)
  • Various nuts (optional)

Instructions

  1. Melt the dark chocolate in a double boiler over simmering water, stirring occasionally until smooth.
  2. Prepare a baking sheet by lining it with parchment paper, ensuring it is on a straight, firm surface.
  3. Using a spoon, drop spoonfuls of melted chocolate onto the parchment paper, gently spreading each to form a disc about 2 inches in diameter.
  4. While the chocolate is still soft, top each disc with a few raisins, a hazelnut, and a piece of candied ginger. You can also add other dried fruits and nuts as desired.
  5. Allow the mendiants to cool at room temperature until the chocolate is set and firm, about 30 minutes.
  6. Once set, carefully peel the mendiants off the parchment paper and store them in an airtight container.

Ensure the chocolate is not overheated to maintain a smooth texture. Experiment with different combinations of dried fruits and nuts for varied flavors and textures. Store mendiants in a cool, dry place to prevent melting.
