For the Chicken:
- 1 lb. thinly sliced boneless chicken breast
- 1 egg, beaten
- 1 tablespoon milk
- 1 tablespoon coconut flour
- 1 tablespoon arrowroot flour or cornstarch
- 1/2 tablespoon paprika
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1–2 tablespoons coconut oil for frying
For the Waffles:
- 2 cups mashed potatoes
- 1/2 cup almond flour
- 2 eggs
- 2 tablespoons extra virgin olive oil
- 1/4 cup almond milk
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
For the Maple Sriracha Syrup:
- 1/4 cup maple syrup
- 1/2–1 tablespoon sriracha sauce
- Optional for serving: avocado slices
Instructions
- Marinate the Chicken:
- Place chicken in a sealable bag. Mix egg and milk, and pour into the bag. Let sit for 10 minutes.
- Combine coconut flour, arrowroot flour, paprika, salt, pepper, onion powder, and garlic powder in a bowl.
- Drain excess egg/milk from the bag, then add seasoning mix. Massage to coat the chicken evenly.
- Cook the Chicken:
- Heat coconut oil in a skillet over medium-high heat.
- Fry chicken for about 3 minutes per side until cooked through. Transfer to a paper towel-lined plate.
- Prepare Waffle Batter:
- Preheat waffle iron to the highest setting.
- Mix together mashed potatoes, almond flour, eggs, olive oil, almond milk, baking powder, baking soda, and salt.
- Cook the Waffles:
- Place a scoop of batter in the center of the hot waffle maker. Close and cook for 3-4 minutes until crisp. Repeat with remaining batter.
- Make Maple Sriracha Syrup:
- Mix maple syrup and sriracha in a small bowl.
