- 8 ounces lowfat cream cheese, softened
- 1 cup ricotta cheese
- 1/2 cup Parmesan cheese
- 1-10oz bag chopped spinach, frozen and thawed, squeezed dry
- 1 box lasagna noodles, cooked according to package directions
- 1 cup mozzarella cheese, divided
- Salt, to taste
- 1 teaspoon Italian seasoning
- 1 jar marinara sauce
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the softened cream cheese, ricotta cheese, Parmesan cheese, 1/2 cup of the mozzarella cheese, Italian seasoning, and the squeezed dry spinach. Mix until well combined and season with salt to taste.
- Lay each cooked lasagna noodle flat on a clean surface. Spread a generous amount of the cheese and spinach mixture over each noodle.
- Roll each noodle up tightly and place seam side down in a baking dish.
- Pour marinara sauce over the top of the lasagna rolls, ensuring they are well covered.
- Sprinkle the remaining 1/2 cup of mozzarella cheese over the top of the sauce-covered rolls.
- Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
Ensure the spinach is thoroughly squeezed dry to prevent excess moisture in the filling. These rolls can be prepared in advance and stored in the refrigerator for up to 24 hours before baking. For a spicier kick, consider adding a pinch of red pepper flakes to the cheese mixture.
