Cabbage Hash Skillet

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1/4 cup finely diced yellow onion
  • 1/2 head green cabbage (cored and shredded)
  • 4 eggs
  • salt/pepper (to taste)
  • 1 green onion (thinly sliced (green parts only))

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large oven-proof skillet, heat olive oil over medium heat. Add garlic and onion and cook until onions are translucent, 2-3 minutes. Add cabbage. Cook, stirring occasionally until cabbage becomes tender. Season with salt and pepper, to taste.
  3. Make 4 divots in the cabbage mixture. Crack one egg into each divot. Place in oven and cook just until the whites are set, about 5 minutes.
  4. Remove from oven, sprinkle top with green onion and a little more salt and pepper, if needed. Serve immediately.
