Apple Pie-Spiced Pancakes

Ingredients

Scale
  • 1 cup blanched almond flour
  • 1 cup tapioca flour
  • 2 apple pie spice
  • 1 ¼ tsp baking soda
  • 1 tsp sea salt
  • 1 cup North Coast Organic (Unsweetened Applesauce)
  • 4 eggs (whisked)
  • ¼ cup coconut sugar (maple sugar)
  • 2 tsp vanilla extract
  • 1 medium honeycrisp apple (diced small)
  • For cooking: ghee or avocado oil

For the apple topping

  • 1 large apple (diced)
  • 1 Tbsp ghee
  • Small pinch cinnamon
  • 1/8 tsp sea salt

Optional toppings:

  • Sliced nuts
  • Maple syrup or honey

Instructions

  1. Combine the blanched almond flour, tapioca flour, baking soda, sea salt, and spices in a small bow, breaking up any chunks of almond flour with a fork.
  2. Stir in the vanilla, applesauce, eggs, and sugar until all the ingredients are combined – but be careful not to over-mix.
  3. Allow the batter to sit for a few minutes while you prepare the apple topping.
  4. For the apple topping, melt the 1 Tbsp ghee in a small skillet. Add the apple chunks, a pinch of cinnamon and sea salt. Cook for about 10 minutes over medium-low heat, until the apples are soft, stirring often.
  5. While the apples are cooking, make the pancakes: in a large skillet, heat 1 Tbsp of ghee or avocado oil. Once hot, add the pancakes with a ¼ – ? cup scoop. Cook for about 3 minutes each side, until you begin to see tiny bubbles popping up on the first side and the pancakes are golden brown.
  6. Serve immediately with the apple topping, some sliced nuts and maple syrup if you like!
