Description

We layered our jars with cashew ganache on the bottom. This is optional, but a delicious chocolate element to the dessert.


Ingredients

GANACHE

  • 2 cups dark chocolate/vegan chocolate chips (I used enjoy life brand)
  • 3/4 cup cashew milk

PANNA COTTA

  • 2 cups Elmhurst cashew milk
  • 2/3 cup sugar
  • 1 tablespoon agar agar (if you just want it to be dairy free and not vegan, you can use gelatin instead)
  • 1 teaspoon vanilla
  • Fruit to garnish (we loved topping ours with sweet-tart raspberries.)

Instructions

GANACHE

  1. Brin the cashew milk to a boil.
  2. Pour hot milk over chips and let sit for 1 minute.
  3. Stir until chips are melted.
  4. Pour equal amounts into the bottoms of jars or cups and refrigerate until set.

PANNA COTTA

  1. Combine milk, sugar and vanilla in a saucepan and heat until a simmer and until sugar is dissolved.
  2. Remove from heat and stir in gelatin or agar agar
  3. Let cool in pan until room temp
  4. Pour into jars and refrigerate until set. About 4 hours.
  5. Top with fruit and enjoy!
