Description

Cooked dates provide the sweetness in these treats which are easy to customize with dried fruits and nuts of your choice.

Ingredients

Scale
  • 20 black dates
  • 2 tbsp. ghee
  • 10-12 almonds
  • 10-12 Pistachios
  • 2 tbsp Poppy seeds or desiccated coconut

Instructions

  1. De-seed all the dates and finely chop into small pieces. Chop almonds and Pistachios.
  2. Heat ghee in a non-stick pan and add chopped dates in it. Cook for about 6-7 minutes until the dates turn into soft lump.
  3. Remove the pan from heat and add chopped nuts and mix well. Divide the soft dough into 7-8 small portions and shape them into rolls.
  4. Spread the poppy seeds or desiccated coconut in a flat plate and coat each date roll with it. Refrigerate all the rolls for a few hours before serving.
  5. Refrigerate these rolls for longer shelf life.

Frequently Asked Questions

Why does the recipe call for black dates specifically?

Black dates (Kali Khajoor) are soft, very sweet, and have a rich molasses-like flavor that binds the filling when cooked in 2 tbsp of ghee for 6–7 minutes until they form a soft, pliable lump. Medjool or other soft date varieties can be substituted — drier dates won’t cook down into the same cohesive dough.

Why do the rolls need to be refrigerated before serving?

After shaping, each roll is coated in poppy seeds or desiccated coconut and then refrigerated for a few hours before serving. Chilling firms the date mixture so the rolls hold their shape when sliced or eaten, and the recipe notes they keep longer refrigerated for extended shelf life.
