Spicy Grilled Cheese Sandwich

A grilled cheese made with jalapeno and cheese bread, mature cheddar, sliced spring onions, and butter. Simple, spicy, and golden on both sides.

Jalapeno and cheese bread. Butter. Cheddar. Spring onions. That is the ingredient list for this grilled cheese. Six slices of the bread, buttered on the outside, filled with grated mature cheddar and sliced spring onions. Griddled until golden on both sides and the cheese pulls.

The spice is already in the bread. The spring onions add a fresh sharpness between the melted cheddar layers. No sauce, no extras, no complications. The pan was empty in about ten minutes flat.

Tips for Making Spicy Grilled Cheese

Use mature cheddar

Mature cheddar has a sharper flavour than mild. It stands up to the spice in the jalapeno bread. Grate it rather than slice for faster, more even melting.

One heaped cup of grated cheese for three sandwiches. That is about 45 grams of cheese per sandwich.

Cook on medium heat

Butter the outside of each slice. Medium heat in a non-stick pan. Three to four minutes per side.

Press lightly with a spatula. The cheese needs time to melt before the bread gets too dark.

Frequently Asked Questions

Where do I find jalapeno and cheese bread?

Many bakeries and grocery stores carry it. Look for it in the artisan bread section. If unavailable, use sourdough and add sliced jalapenos inside the sandwich.

Can I add meat?

Crispy bacon or sliced ham both work. Keep it thin. The sandwich is already substantial with the cheese and bread.

Can I use a different cheese?

Gruyere, Monterey Jack, or pepper jack all melt well. Pepper jack doubles down on the spice.
