Frequently Asked Questions

Why soak the basmati rice for 20 minutes before cooking?

The recipe instructs you to wash the rice well and then soak it in warm water for 20 minutes before cooking. Soaking basmati lets the grains absorb water and elongate, resulting in fluffy, separate grains once cooked — rather than sticky, clumped rice. Skip this step and the texture will be noticeably denser.

The recipe mentions chicken stock in the instructions — how much should I use?

Chicken stock appears in step 9 of the instructions (“add chicken stock and stir”) but is not listed in the ingredients with a quantity. A standard ratio for basmati is 1.5 to 2 cups of liquid per 2 cups of rice. Use chicken or vegetable stock in that ratio for the best flavor, adjusting to taste.
