These Coconut Coated No Bake Energy Bites, with just prunes, almonds, chia seeds, and orange zest, are a quick and healthy snack or on-the-go breakfast.


Ingredients

  • ½ cup 90 g almonds
  • 1 cup 250 g packed prunes
  • 1 Tbsp 12 g chia seeds
  • 1 Tbsp orange zest
  • Pinch of salt
  • ½ cup 45 g shredded coconut

Instructions

  1. In a food processor, process almonds until coarsely ground. Add prunes, chia seeds, orange zest, and salt, and process until the mixture is evenly mixed and forms a ball.
  2. Form teaspoon sized pieces of dough into balls and roll in the shredded coconut to coat.
