Heavenly Gouda Lobster Pizza

Lobster pizza – just the mere mention of it is enough to make your mouth water. Imagine biting into a crispy crust loaded with succulent lobster meat, melted gouda cheese, and wilted spinach. It’s a decadent treat that’s perfect for a special occasion, or even just a regular weeknight dinner.

This is pretty much like a fancy seafood feast decided to take a detour and crash a pizza party – the result is a love affair between crispy crust, melted cheese, and sweet lobster meat. It’s so good, you’ll be saying ‘shell yeah!’ with every bite.

We’re going to take you on a flavor journey, and the first stop is the sauté pan. Sizzle up some onions in olive oil until they’re soft and tender. Add some sliced mushrooms to the pan and let them cook until they’re lightly browned. Toss in some baby spinach leaves, and watch as they wilt down into a delicious and nutritious green delight. This trio of mushrooms, onions, and spinach will form the foundation of your pizza, and they’re the perfect stage for the main act – the lobster.

Next, it’s time to preheat your oven to 450°F and get your pizza stone (or baking sheet) ready. If you don’t have a pizza peel, don’t worry. Just sprinkle some cornmeal on a piece of parchment paper, slide the parchment onto the baking sheet, and you’re good to go. Roll out your pizza dough into a 10-12 inch round, place it on the parchment paper, and let it rest for a few minutes.

It’s now time to assemble the pizza. Spread the mushroom, onion, and spinach mixture evenly across the dough, and then top with chunks of cooked lobster meat. Sprinkle shredded gouda cheese and mozzarella cheese on top, and then pop the pizza in the oven.

As the pizza bakes, the cheese will melt, the crust will crisp, and the lobster will warm through. When the timer goes off, pull the pizza out of the oven and let it cool for a few minutes. This will give the cheese time to set, and the crust time to crisp up. Then, slice it up and serve hot.

Ingredients

Scale
  • 1 Tbsp Olive Oil
  • 3 Tbsp finely chopped onion
  • 1 cup sliced mushrooms
  • 2 cup spinach leaves
  • 1 Pizza Dough (store bought or homemade)
  • a little corn meal to sprinkle on pan
  • 1 cup cooked lobster meat
  • 1 1/2 cup shredded Gouda Cheese
  • about 1/2 cup shredded Mozzarella

Instructions

  1. Saute’ onion in olive oil until soft. Add mushrooms and continue sauteing until lightly browned. Add spinach and stir until just wilted. Remove from heat.
  2. Preheat oven to 450°F. If you have a pizza stone, heat the stone.
  3. I sprinkle corn meal on parchment paper and then slide the parchment onto the stone because I don’t have a pizza peel.
  4. Stretch dough and roll into 10-12″ round.
  5. Place on parchment paper.
  6. Cover with a kitchen towel and let dough rest for about 5 minutes.
  7. Spread mushrooms and spinach evenly across dough.
  8. Top with lobster and then the cheeses.
  9. Bake for 18-20 minutes until golden and bubbly
