- 1 tsp instant yeast
- 3 1/2 cups whey from making yogurt (or water), at room temperature
- 5 1/2 cups all-purpose flour
- 1 3/4 cups whole-wheat flour
- 1/3 cup flax seeds
- 1 tbsp salt
Instructions
- Oil the inside of two 9 x 5 inch metal loaf pans with vegetable oil.
- In a large bowl, combine 1 teaspoon of instant yeast, 3 1/2 cups of whey (or water), 5 1/2 cups of all-purpose flour, 1 3/4 cups of whole-wheat flour, 1/3 cup of flax seeds, and 1 tablespoon of salt. Mix until a sticky dough forms.
- Divide the dough evenly between the prepared loaf pans. Smooth the tops with a spatula.
- Cover the pans with a clean, damp dish towel and let the dough rise in a warm place for about 2 hours, or until it has doubled in size.
- Preheat your oven to 375°F (190°C).
- Bake the loaves in the preheated oven for 45 minutes, or until the tops are golden brown and the loaves sound hollow when tapped on the bottom.
- Remove the loaves from the oven and let them cool in the pans for 10 minutes. Then, turn them out onto a wire rack to cool completely before slicing.
Notes
You can store loaves in a paper bag for up to a week. For longer storage, wrap tightly and freeze. This bread is excellent with peanut butter and jam for breakfast or as a snack.
