Peri-Peri Tofu with Kale and Mustard Seeds

Quick peri-peri tofu sautéed with kale and mustard seeds has a sour-spicy flavor combination to make a light meal with tons of filling flavors and protein.
  • 1 packet firm tofu
  • 1 onion chopped
  • ½ inch piece of ginger chopped
  • 3 cloves garlic chopped
  • 2 cups kale
  • 2 tablespoons Peri-Peri sauce
  • 2 teaspoons mustard seeds
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • chives to garnish
  1. Add olive oil to a pan over medium heat, and let it heat up
  2. Add onions, ginger, garlic and saute for about 15 minutes, stirring constantly
  3. Add mustard seeds, tofu, and Peri-Peri and saute till tofu turns golden brown
  4. Add the kale and let kale cook covered - about 2-3 minutes
  5. Garnish with chives and enjoy either plain or with a side of bread &/or a salad
