Ingredients

Units Scale
  • 2 cups (480 ml) of watermelon chunks, seeds removed
  • 100 mls white rum
  • Juice of half a lime or 30-50mls fresh lime juice (to taste)
  • 4-6 tsp caster sugar (to taste)
  • 2 large handfuls of ice
  • Mint sprigs, to garnish

Instructions

  1. Put first five ingredients in blender and blend until smooth and frothy.
  2. Pour into martini glasses and garnish with a mint sprig.
  3. Makes 2 large serves (4 martini glasses)

How sweet should this be, and when do I adjust the sugar and lime?

Both are intentionally given as ranges: 4 to 6 tsp caster sugar and 30 to 50 ml lime juice (or the juice of half a lime). Taste after blending and adjust based on how sweet your watermelon is. A very ripe, naturally sweet melon needs less sugar and possibly a touch more lime to keep it lively.
