Oranges are just perfect these months, so I bought some of the best to prepare some delicious dairy-free orange muffins with a touch of dark chocolate.

Dairy-free Orange Muffins with Dark Chocolate Chips

Description
These dairy-free orange muffins are infused with fresh orange zest and studded with dark chocolate chips, offering a delightful balance of citrus and rich cocoa flavors.
Ingredients
- 150g self-raising flour
- 130g soy milk
- 70g sugar
- 60g extra virgin olive oil
- 1 sachet baking powder
- Zest of 1 big orange, grated
- 2 eggs
- 60g dark chocolate chips (min 75% cocoa)
- 1/4 tsp salt
Instructions
- Preheat the oven to 210ºC (410ºF).
- In a large bowl, beat the eggs and sugar until the mixture is slightly white and creamy.
- Add the olive oil, soy milk, and salt to the egg mixture and whisk well to combine.
- Stir in the grated orange zest and mix thoroughly to distribute the flavor evenly.
- Gently fold in the self-raising flour and baking powder until just combined, being careful not to overmix.
- Fold in the dark chocolate chips until evenly distributed throughout the batter.
- Line a muffin tin with paper liners and fill each cup about 3/4 full with the batter.
- Bake in the preheated oven for 15 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Remove from the oven and let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For best results, use fresh orange zest for maximum flavor. These muffins can be stored in an airtight container at room temperature for up to 3 days. If you prefer, substitute dark chocolate chips with your favorite dairy-free chocolate. Perfect for a winter treat, these muffins provide a boost of vitamin C.
