- 150g self-raising flour
- 130g soy milk
- 70g sugar
- 60g extra virgin olive oil
- 1 sachet baking powder
- Zest of 1 big orange, grated
- 2 eggs

- 1/4 tsp salt
Instructions
- Preheat the oven to 210ºC (410ºF).
- In a large bowl, beat the eggs and sugar until the mixture is slightly white and creamy.
- Add the olive oil, soy milk, and salt to the egg mixture and whisk well to combine.
- Stir in the grated orange zest and mix thoroughly to distribute the flavor evenly.
- Gently fold in the self-raising flour and baking powder until just combined, being careful not to overmix.

- Line a muffin tin with paper liners and fill each cup about 3/4 full with the batter.
- Bake in the preheated oven for 15 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Remove from the oven and let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
