Cauliflower and Leek Soup

This is an easy recipe for a delicate, cozy winter soup.


  • 1 cauliflower cut into florets.
  • 2 leeks cut into round slices.
  • 1 sliced potatoe
  • 3 tbs olive oil
  • 3 cups of water (or until covering the ingredients)
  • salt and pepper
  • 2 tbs cream cheese


  1. Heat the oil in a large saucepan over medium heat.
  2. Add leeks and cook while stirring during three or four minutes until softened.
  3. Add potato and cauliflower and cook for five more minutes.
  4. Cover the ingredients with the water and season with salt.
  5. Simmer for twenty minutes or until potato is tender.
  6. Let it cool slightly.
  7. Beat until creamy and smoothie.
  8. Add two tablespoons of cream cheese
  9. Season it with salt and pepper if necessary.
