Description

Sweet mango with a spicy jerk kick makes these wings a delightful treat perfect for game day and more.


Ingredients

  • 1 tbsp olive oil
  • 1/2 medium sized onion, chopped
  • 1 1/2 cups (360 ml) mango, sliced and cubed
  • 1/4 cup (60 ml) lime or lemon juice
  • 2/3 cup (160 ml) mango nectar or orange juice
  • 2 tbsp brown sugar
  • 1 tbsp honey
  • 1 1/2 tsp allspice
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 1/2 tsp paprika
  • 1/4 tsp cayenne
  • 1 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 2 tsp garlic powder
  • 1 1/2 lb (680 g) chicken wings, disjointed
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large pan, heat 1 tbsp of olive oil over medium heat. Add the chopped onion and cook for 5-7 minutes, stirring occasionally, until the onion is soft and translucent.
  3. Add the sliced and cubed mango to the pan and sauté for another 3-4 minutes until the mango is tender.
  4. Transfer the cooked onion and mango to a blender or food processor. Add the lime or lemon juice, mango nectar or orange juice, brown sugar, honey, and jerk seasoning. Blend until smooth.
  5. Place the chicken wings in a large bowl and season with salt and pepper. Pour the mango jerk sauce over the wings, ensuring they are well coated.
  6. Arrange the coated wings on a baking sheet lined with parchment paper or a lightly greased baking rack.
  7. Bake in the preheated oven for 35-40 minutes, turning halfway through, until the wings are cooked through and the skin is crispy and golden brown.
  8. Remove from the oven and let rest for a few minutes before serving. Enjoy your sweet and spicy mango jerk wings!

Notes

  • For a spicier kick, increase the amount of jerk seasoning.
  • These wings are best served fresh but can be stored in an airtight container in the refrigerator for up to 2 days.
