This Indonesian-style, Spicy Grilled Sambal Chicken is juicy and tender, full of great flavor, and can be prepared in less than 30 minutes.

- 1.5 pounds boneless, skinless chicken thighs
- 3 tablespoons Sambal Olek
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 tablespoon vegetable oil
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
Instructions
- In a bowl, mix Sambal Olek, soy sauce, brown sugar, lime juice, vegetable oil, garlic powder, and ginger powder.
- Add chicken thighs to the marinade and coat well. Let it marinate for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked and slightly charred.
- Remove from grill and let it rest for a few minutes before serving.
