Description
A mild blue cheese and brie combo elevates a classic BLT, melting over bacon, lettuce, and tomatoes for a flavorful summer sandwich.
Ingredients

- 1 tbsp (15 ml) mayonnaise
- 1 tbsp (15 ml) Dijon mustard
- 8 slices of bread
- 8 slices of bacon, cooked
- 8 thick slices of heirloom tomatoes
- 8 slices of Saga Blue Brie
- 1 avocado, sliced
- Butter, for cooking
Instructions
- Begin by combining the mayonnaise and Dijon mustard in a small bowl. Mix until smooth.
- Spread the mayonnaise and Dijon mixture on one side of each slice of bread.
- Layer 2 slices of bacon, 2 slices of heirloom tomatoes, and 2 slices of Saga Blue Brie on 4 slices of bread.
- Add slices of avocado on top of the cheese.
- Top each sandwich with the remaining slices of bread, spread side down.
- Heat a skillet over medium heat and add a small amount of butter.
- Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
- Remove from the skillet, slice in half, and serve immediately.
Notes
- For a vegetarian version, omit the bacon and add more avocado or grilled vegetables.
- Use fresh, in-season tomatoes for the best flavor.
- The Saga Blue Brie is mild and perfect for those new to blue cheese.
- Store any leftover sandwiches in an airtight container in the refrigerator for up to 1 day.
