Description

Juicy on the inside, crisp on the outside, this sour cherry strudel is a sweet and tart delight, offering a modern twist on a traditional favorite.


Ingredients

  • 9 sheets of phyllo dough
  • 31 oz (900 g) sour cherries, pitted (fresh or frozen)
  • 2.8 oz (80 g) vanilla pudding powder (2 packets)
  • 5 oz (150 g) sugar
  • 1 tsp vanilla extract
  • Some powdered sugar for serving
  • Oil or melted butter for brushing
  • Warm milk for brushing after baking

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using frozen cherries, thaw them and drain the juice thoroughly.
  3. In a large bowl, combine the cherries, sugar, vanilla extract, and vanilla pudding powder. Mix well to ensure the pudding powder absorbs the cherry juice.
  4. Lay one sheet of phyllo dough on a clean surface and brush it lightly with oil or melted butter. Place another sheet on top and repeat the brushing. Do this for three sheets in total.
  5. Spoon a portion of the cherry mixture along one edge of the phyllo stack, leaving some space at the edges.
  6. Carefully roll the phyllo over the filling to form a log, tucking in the sides as you go to encase the filling.
  7. Place the strudel seam-side down on a baking sheet lined with parchment paper.
  8. Repeat the process with the remaining phyllo sheets and filling to make three strudels in total.
  9. Bake in the preheated oven for 40 minutes, or until the strudels are golden brown and crisp.
  10. Once baked, brush the hot strudels with warm milk to soften the crust slightly and make it juicier.
  11. Allow to cool slightly, then dust with powdered sugar before serving.

Notes

For a more homemade feel, brush the hot strudel with warm milk after baking. This softens the store-bought dough and enhances its flavor. If you prefer a different filling, try grated apples with cinnamon or cottage cheese with sour cream. Store leftovers in an airtight container for up to 3 days.
