Notes
Crab meat: Use lump or claw meat, fresh or pasteurized. Drain well before using.
Roasted red pepper: Jarred is fine. Avoid anything vinegary or packed in oil.
Butter: Most of it goes into the stuffing, but you can reserve a tablespoon or two for dipping at the table.
Make ahead: You can prep the stuffed tails a few hours in advance. Store in the fridge and bake just before serving.

It never said how much Old Bay. Is the melted butter for dipping or does it go in the mixtures?
Are the roasted red peppers bell peppers, crushed red pepper or something else?
Lori! Thanks for catching that — you’re right, the Old Bay amount isn’t specified, boo us! A good starting point is 3/4 teaspoons per lobster tail, mixed into the stuffing for seasoning. As for the melted butter, it’s intended to be mixed into the stuffing along with the breadcrumbs and aromatics — though you could reserve a little for dipping if you like. And yes, the roasted red peppers refer to roasted red bell peppers, not crushed red pepper flakes. We will have this updated shortly!
