Description

This nutty almond and coconut ice cream is unbelievably creamy and delicious despite having no cream, featuring toasted almonds and coconut for a delightful crunch.


Ingredients

  • 1 1/2 cups unsweetened Dream Ultimate Almond, divided
  • 2 tablespoons arrowroot or cornstarch
  • 2 cans full fat coconut milk, chilled overnight in the refrigerator
  • 1/3 cup coconut sugar
  • 1/3 cup maple syrup
  • 1/2 cup shredded coconut
  • 1/2 cup sliced almonds

Instructions

  1. In a small bowl, whisk together ½ cup Dream Ultimate Almond with arrowroot until smooth. Set aside.
  2. Open the chilled cans of coconut milk and scoop out 1½ cups of the top solidified coconut cream. Save the remaining liquid for another use.
  3. In a medium saucepan, combine the remaining 1 cup of Dream Ultimate Almond, coconut cream, coconut sugar, and maple syrup. Cook over medium heat, stirring frequently, until the mixture begins to steam and the sugar has dissolved, about 5-7 minutes.
  4. Stir in the arrowroot mixture and continue to cook, stirring constantly, until the mixture thickens slightly, about 2-3 minutes. Remove from heat and let cool to room temperature.
  5. While the mixture cools, toast the shredded coconut and sliced almonds in a dry skillet over medium heat, stirring frequently, until golden brown and fragrant, about 5 minutes. Set aside to cool.
  6. Once the ice cream base has cooled, transfer it to an ice cream maker and churn according to the manufacturer’s instructions.
  7. In the last few minutes of churning, add the toasted coconut and almonds.
  8. Transfer the ice cream to a lidded container and freeze for at least 4 hours or until firm.

Notes

Toasting the almonds and coconut is essential for depth of flavor. Do not substitute the coconut sugar or maple syrup as they contribute to the unique taste. Store the ice cream in an airtight container in the freezer for up to 2 weeks. Allow the ice cream to sit at room temperature for a few minutes before scooping for easier serving.
