Old fashion egg salad may not be a very fancy salad or recipe but it’s definitely one of our favorite lunches. Egg salad is one of those dishes that can quickly go from simple, yet tasty, to complicated and just gross. I think where people go wrong is when they start adding all those extra and unnecessary ingredients. Egg salad like potato salad and tuna salad have to stay simple to truly be enjoyed properly. Real mayonnaise must be used so don’t even think about using that unmentionable salad dressing. The seasoning also stays simple. Don’t add celery, peas or anything else it really just takes away from the taste. Okay, I understand it really does just come down to personal preference. But honestly I just can’t eat egg salad with all those extra ingredients.

Description

A classic salad made the best way, the old fashioned and simple way.


Ingredients

Scale
  • 6 hard boiled eggs
  • 34 tbsp. mayonnaise
  • 1/2 tsp. salt, adjust to taste
  • pinch ground black pepper, adjust to taste

Instructions

  1. Remove the shells from the boiled eggs. Place the eggs in a large bowl, using either the back of the fork or a potato masher push down to break up the eggs. Continue until you have coarse pieces or to the desired consistency.
  2. Add the mayonnaise to the bowl and mix until well incorporated. Sprinkle the salt and ground black pepper over the egg salad and mix until well incorporated. Taste and adjust salt and/or pepper if needed.

One of my  favorite lunches is egg salad sandwiches on wheat bread. You can’t beat a classic salad made the best way, the old fashioned and simple way. Simplicity and deliciousness at it’s best!

  1. I love egg salad, and make it often because I have school lunches to fill! Like you, I keep it simple, although I might dress the sandwich with cucumber, lettuce or tomato. Oh, and I use a cheese grater to grate the eggs. Makes quick work of it!

    1. Ruby that sounds really good, love the little crunch, so I will try it next time. Grating sounds like a time saver.

  2. I agree that it’s better to keep it simple, but I do like a little zing, so I add green onions and a teaspoon of mustard. It’s also crucial to use good mayo (Best Foods / Hellman’s IMHO).






  3. I love egg salad and funny because I am not the biggest of egg eaters. I like it just like this without too much added to it. Gorgeous photos as always, and I so want those little cups :)
