Had a few friends visiting us the last weekend and my pantry ended up with a good stock of extremely tasty Dates. These luscious and juicy dates were Lion’s Dessert-King Dates. While they were truly good for munching as such, I ended up making these Energy Squares.
Of course my kids don’t share the same exuberance when it comes to devouring the dates as such and this is when I chanced upon these energy bars @ Veg Bowl. I instinctively knew that these squares would be a hit. I added some Cocoa Powder to the original recipe and the result was fabulous.

Sticky Date and Nut Squares

Description
These no-bake sticky date and nut squares are a delightful combination of dates, nuts, and cocoa, perfect for a healthy snack or to satisfy midnight cravings.
Ingredients
- 300 grams pitted and chopped dates (Lion's DessertKing Dates recommended)
- 200 grams raw cashew nuts
- 100 grams raw almonds (with skin on)
- 2 tbsp (30 ml) cocoa powder
- 1 to 3 tbsp (15-45 ml) fruit juice (as required)
Instructions
- Combine the chopped dates, cashew nuts, and almonds in a food processor. Ensure you use moist dates for this recipe, as dried ones will not provide the same texture and flavor.
- Add the cocoa powder to the mixture.
- Pulse and process all the ingredients together until they form a sticky, cohesive mass. If the mixture is too dry, gradually add fruit juice, one tbsp at a time, until the desired consistency is achieved.
- Transfer the mixture to a lined baking dish and press it down firmly to create an even layer.
- Refrigerate for at least 1 hour to allow the mixture to set.
- Once set, cut into squares and serve.
Notes
- Use moist dates for the best texture; dried dates won’t work as well.
- Adjust the amount of fruit juice based on the moisture content of your dates.
- These squares can be stored in an airtight container in the refrigerator for up to a week.
- They make a great on-the-go snack or a quick energy boost.
