These No Bake Energy Bites are seriously simple. Our spotlight ingredient this week is plums, and we’re taking them to a new level by using their dried version, prunes, as the foundation for these energy bites. Ingredients

  • 1 Tbsp chia seeds
  • 1 Tbsp orange zest
  • Pinch of salt
  • 1/2 cups (118 ml) shredded coconut

Instructions

  1. In a food processor, process almonds until coarsely ground.
  2. Add prunes, chia seeds, orange zest, and salt, and process until the mixture is evenly mixed and forms a ball.
  3. Form teaspoon-sized pieces of dough into balls and roll in the shredded coconut to coat.
