Ingredients

Scale

For the apple donuts:

  • 2 eggs large
  • 1/4 cup Swerve Confectioners Sweetener
  • 1 tsp vanilla extract
  • 1/3 cup North Coast Apple sauce
  • 1/2 tsp Xanthan gum optional
  • 1 cup almond flour
  • 1/8 tsp salt optional
  • 1/4 tsp baking soda
  • 1 tsp ground cinnamon

For the glaze:

  • 1/4 cup Swerve Confectioners Sweetener
  • 3 tbsp heavy cream

Instructions

For the glaze:

  1. Mix all ingredients together in a small bowl. Add more heavy cream or water to thin the mixture, if necessary.

For the apple donuts:

  1. Preheat oven to 350 F.
  2. Mix ingredients together with a wire whisk until just combined. Don’t over mix.
  3. Spray a 6 slot donut pan with cooking spray (avocado oil or coconut is great low-carb and Keto donuts).
  4. Fill a piping bag with the batter. Divide mixture between the 6 donut slots.
  5. Bake for 15 minutes, or until toothpick inserted comes out clean.
  6. Cool completely inside the pan. Carefully remove from the pan. Drizzle the glaze over the donuts.
  7. Keep in the fridge in an air-tight container for up to 1 week.
