Yellow tomato gazpacho is better than the red version, and I will not apologize for that opinion. Yellow tomatoes are sweeter and less acidic, which means the soup tastes like summer produce rather than cold marinara. Blend them with cucumber, onion, and bell pepper, season with salt and pepper, and chill. The levain croutons, just cubed and toasted levain bread, are the only thing this soup needs on top.

Blending everything until smooth and serving it cold lets each vegetable come through clearly. You taste cool cucumber first, then sharp onion, then the sweetness of the bell pepper underneath the yellow tomatoes. Skip the garnish arms race and just use levain croutons for crunch. One of my favorite things we make all summer.


Tips for a Better Yellow Tomato Gazpacho

Use Ripe Yellow Tomatoes

The flavor of this gazpacho depends entirely on the tomatoes. Use ripe, in-season yellow tomatoes that smell sweet at the stem end. Underripe yellow tomatoes are bland, and no amount of seasoning fixes that.

If the tomatoes are slightly tart after blending, add a pinch of sugar. But truly ripe yellow tomatoes should not need it. Taste the blended soup before seasoning with salt and pepper.

Toast the Levain Croutons Until Deep Golden

Cube the levain bread into 1 cm (1/2 inch) pieces and toast them in the oven or a dry skillet until they are deep golden and crunchy all the way through. Pale croutons absorb the gazpacho and go soft in seconds.

Add the croutons just before serving so they stay crunchy. If you are plating individual bowls, set the croutons in the center of each bowl and serve immediately.
