Description
A flavorful homemade tomato sauce with a unique twist of cinnamon and Martini Rosato, perfect for pasta or as a dipping sauce.
Ingredients

- 6 big ripe tomatoes
- 1 sweet onion
- 4 cloves of garlic
- 1 teaspoon ground cinnamon
- 1/4 cup Martini Rosato
- 1 carrot
- 1 teaspoon sugar
- 2 teaspoons Maldon salt
- A bunch of fresh basil
- 4 tablespoons olive oil
Instructions
- Chop the onion and carrot into tiny bits.
- In a large pan, heat 4 tablespoons of olive oil over medium heat.
- Add the chopped onion and carrot to the pan and stir-fry until the onion is soft and translucent, about 5 minutes.
- Wash and chop the tomatoes, then add them to the pan and mix well.
- Crush the garlic cloves and add them to the sauce. Lower the heat and cook for 3 minutes.
- Add the ground cinnamon and Martini Rosato, stirring to combine.
- Season with sugar and Maldon salt, then let the sauce simmer on low heat for about 15 minutes, stirring occasionally, until it thickens and the flavors meld together.
- Just before serving, tear the fresh basil leaves and stir them into the sauce.
Notes
This sauce pairs well with pasta or as a dipping sauce for bread. Use organic tomatoes for the best flavor. The Martini Rosato adds a unique bittersweet flavor that complements the tomatoes. Store leftovers in an airtight container in the fridge for up to 3 days.
