Let’s get something straight real quick… I’m not a chef. I actually really dislike being in the kitchen for hours on end (aside from baking!). I know this sounds weird since I’m a “food blogger”… but it’s the truth.
HOWEVER, I do love food. Eating food, trying new restaurants, micromanaging my waiter to make me the most bomb off-menu item, etc… but I mostly pride myself on quick and easy meals. Ones that I throw together in .2 seconds using random things I find in the kitchen. Meals that are efficient, easy, healthy and still taste BOMB.
I’m all about efficiency and getting resourceful.
Cooking is essentially a game for me. What can I come up with using the ingredients I already have that’s also healthy and tastes delicious?
That’s why my crockpot is my BFF.
My favorite meals come from this glorious little gem that takes up too much space in my tiny kitchen. Michael and I practically live off of my Honey Garlic Chicken and Shredded Chicken Breast recipe. We also love a big, warm bowl of white chicken chili topped with all the avocado and spices when it’s cold out.
It was only a matter of time before this salsa verde crockpot chicken made it to the blog because we’ve been eating it non-stop.
Michael LOVES spicy dishes (especially baked firecracker chicken) and I love Mexican cuisine, so this recipe was a win-win.

Ingredients
- 8 Frozen Chicken Tenders
- 16 oz Salsa Verde I used Pace
- 12 oz Chopped Tomatoes
- 1 Tbsp Minced Garlic
- 1 Tsp Cumin
- 1/2 Tbsp Red Pepper
- 1 Tsp Chili Powder
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- Salt to taste
- Pepper to taste
Instructions
- Spray your crockpot with cooking spray and place 8 frozen chicken tenders on the bottom.
- Pour salsa and tomatoes on top of chicken.
- Add seasonings and mix until well combined.
- Cook on high for 4 1/2 hours or low for 8 hours.
- Prep Time: 5 minutes
