- 500 g Butter or Margarine
- 500 g Caster Sugar
- Vanilla Seeds of 1 pod
- 2 Eggs
- 2 tsp Baking Powder
- 1000 g Plain Flour
- 1 Egg Yolk (for pastry brush)
- Icing Sugar
- Your Favourite Jam
Instructions
- Preheat your oven to 200°C (392°F) and line a baking tray with greaseproof paper.
- In a large bowl, combine the butter or margarine, caster sugar, vanilla seeds, eggs, baking powder, and plain flour. Use your fingertips to crumble the mixture until it resembles breadcrumbs.
- Bring the dough together with your hands until it forms a smooth ball. Wrap it in cling film and refrigerate for at least 30 minutes.
- Roll out the dough on a lightly floured surface to about 5mm thickness. Use a star-shaped cookie cutter to cut out the cookies.
- Place half of the cookies on the prepared baking tray. Use a smaller star cutter to cut out the centers of the remaining cookies to create a window for the jam.
- Brush the tops of the cookies with the cut-out centers with the egg yolk.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow to cool on a wire rack.
- Once cooled, spread a small amount of your favorite jam on the whole cookies and sandwich them with the cookies with the cut-out centers.
- Dust with icing sugar before serving.
Notes
For the best flavor, use high-quality jam. These cookies are best eaten fresh but can be stored in an airtight container for up to a week. Consider using different jams for variety, such as raspberry, apricot, or strawberry. If you don’t have a star cutter, any shape will work.
