Description

These festive star-shaped cookies are filled with your favorite jam, making them a delicious and sweet holiday treat or gift.


Ingredients

  • 500 g Butter or Margarine
  • 500 g Caster Sugar
  • Vanilla Seeds of 1 pod
  • 2 Eggs
  • 2 tsp Baking Powder
  • 1000 g Plain Flour
  • 1 Egg Yolk (for pastry brush)
  • Icing Sugar
  • Your Favourite Jam

Instructions

  1. Preheat your oven to 200°C (392°F) and line a baking tray with greaseproof paper.
  2. In a large bowl, combine the butter or margarine, caster sugar, vanilla seeds, eggs, baking powder, and plain flour. Use your fingertips to crumble the mixture until it resembles breadcrumbs.
  3. Bring the dough together with your hands until it forms a smooth ball. Wrap it in cling film and refrigerate for at least 30 minutes.
  4. Roll out the dough on a lightly floured surface to about 5mm thickness. Use a star-shaped cookie cutter to cut out the cookies.
  5. Place half of the cookies on the prepared baking tray. Use a smaller star cutter to cut out the centers of the remaining cookies to create a window for the jam.
  6. Brush the tops of the cookies with the cut-out centers with the egg yolk.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow to cool on a wire rack.
  8. Once cooled, spread a small amount of your favorite jam on the whole cookies and sandwich them with the cookies with the cut-out centers.
  9. Dust with icing sugar before serving.

Notes

For the best flavor, use high-quality jam. These cookies are best eaten fresh but can be stored in an airtight container for up to a week. Consider using different jams for variety, such as raspberry, apricot, or strawberry. If you don’t have a star cutter, any shape will work.
