Description
These funfetti whoopie pies are a festive treat made with a yellow cake mix and loaded with colorful sprinkles, sandwiched with a homemade funfetti frosting.

- 1 (15.25 oz) box yellow cake mix
- 3 large eggs
- 1/2 cup water
- 1/2 cup vegetable oil
- 1/2 cup sprinkles
- Funfetti frosting (see linked recipe for details)
Instructions
- Preheat your oven to 350°F (175°C). If using a whoopie pie pan, coat it with butter or shortening and dust generously with flour. Alternatively, line a baking sheet with parchment paper.
- In a large mixing bowl, combine the yellow cake mix, eggs, water, and vegetable oil. Mix until well combined and smooth.
- Gently fold in the sprinkles, being careful not to overmix as this can cause the colors to bleed.
- Spoon the batter into the prepared whoopie pie pan or onto the lined baking sheet, leaving space between each for spreading. Each whoopie pie should be about 2 tablespoons of batter.
- Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden brown and a toothpick inserted into the center comes out clean.
- Allow the whoopie pies to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, spread a generous amount of funfetti frosting on the flat side of one whoopie pie and sandwich with another pie, flat side down.
- Repeat with the remaining whoopie pies and frosting. Serve immediately or store in an airtight container.
Notes
You can use any flavor of cake mix for this recipe, such as chocolate or red velvet. For perfectly round whoopie pies, use a whoopie pie pan. Be sure to grease and flour the pan well to prevent sticking. If you want to pipe the frosting, omit the sprinkles to avoid clogging the piping tip.
