This Bulletproof Chocolate Parfait combines rich chocolate coconut pudding with crumbled protein bars and fresh berries, offering a brain-boosting, energy-filled treat perfect for breakfast or a sweet snack.
Ingredients
- 1 can of full fat (no sugar added coconut milk)
- 1/2 cup dark cocoa powder
- 1/3 cup Bulletproof Coffee Cold Brew Mocha
- 3 tablespoons Bulletproof Brain Octane Oil
- 2 tablespoons cacao butter (melted (you can also use grass fed, unsalted butter here, but it would make this no longer dairy-free))
- Stevia (to taste)
- pinch of sea salt
- 1 cup of strawberries (diced (or other seasonal fruit))
- 1 Bulletproof Lemon Cookie Collagen Protein Bar or Vanilla Shortbread Collagen Protein Bar
Instructions
- Place the coconut milk in the fridge for 12 hours or in the freezer for 4 hours. This will allow the cream to separate from the liquid.
- Open the can of coconut milk and scoop out the thick cream, leaving the liquid behind.
- In a mixing bowl, combine the coconut cream, dark cocoa powder, Bulletproof Coffee Cold Brew Mocha, Bulletproof Brain Octane Oil, and melted cacao butter. Stir until smooth and well combined.
- In serving glasses or jars, layer the chocolate coconut pudding with crumbled Bulletproof protein bars and fresh berries.
- Repeat the layers until the glasses are full, finishing with a layer of berries on top.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
