Frequently Asked Questions

Why do you add red wine to the truffle ganache?

The article calls this pairing “perfection” — 3 tbsp of red wine is heated together with the 1/3 cup of heavy cream before being poured over the 70% dark chocolate. The wine adds fruity, tannic depth that amplifies the bittersweet notes of the chocolate in a way cream alone cannot.

Why does the ganache need to refrigerate for at least 2 hours?

The ganache — made from 8 oz of dark chocolate, 1/3 cup cream, 3 tbsp red wine, 1 tsp butter — is a liquid when warm. The 2-hour chill firms it to a scoopable consistency so you can roll it into loosely shaped balls. Cutting the time short will leave the mixture too soft to hold its shape.

  1. Thank you for this delicious and simple recipe! I was looking for truffles to make as small Christmas presents, so I added a hint of ground cinnamon, cloves, star anise, fennel and pepper to the mixture. Heavenly!
