If you are not familiar with radicchio, it’s a leafy vegetable, with white-veined read leaves. It has a spicy and slightly bitter taste. It can be used raw in a salad or cooked in many different recipes. There are two varieties that can be found around here. One is round and about the size of a grapefruit. The other is called Treviso and has a more elongated shape, similar to the Belgian endive. Both can be used in this recipe. But I used the Treviso, given that it’s coming from the same region as my wine!
For the cheese you can use your favorite soft cheese. From a buttery brie to a spicy gorgonzola (or other blue cheese). Or a simple fontina for a milder taste. Have fun with it and explore the many shades of flavors that come with cheese.
You can make the crepes and the stuffing and serve immediately. Or you can prepare this appetizer ahead of time, and warm up in the over right before serving, with a few pieces of butter and a sprinkle of grated Parmesan cheese on top. You will end up with crispier edges and melty filling. So delicious!

Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 1 tablespoon melted butter
- 1/4 teaspoon salt
- 1 head radicchio, finely chopped
- 8 ounces soft cheese (such as brie, gorgonzola, or fontina)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh chives for tying
- Butter and grated Parmesan cheese for topping
Instructions
- In a large bowl, whisk together the flour, eggs, milk, melted butter, and salt until smooth. Let the batter rest for 30 minutes.
- Heat a non-stick skillet over medium heat and lightly grease with butter. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges begin to lift and the bottom is golden brown. Flip and cook for another 30 seconds. Repeat with remaining batter.
- In a separate pan, heat olive oil over medium heat. Add the chopped radicchio and sauté for 5-7 minutes until wilted and slightly caramelized. Season with salt and pepper.
- Remove the radicchio from heat and let cool slightly. Mix in the soft cheese until well combined.
- Place a spoonful of the radicchio and cheese mixture in the center of each crepe. Gather the edges of the crepe around the filling and tie with a chive to form a bundle.
- If preparing ahead, preheat the oven to 350°F (175°C). Place the crepe bundles on a baking sheet, dot with butter, and sprinkle with grated Parmesan cheese. Bake for 10-15 minutes until the edges are crispy and the filling is melted.
- Serve warm, paired with a glass of Cavit Pinot Grigio.

You can use either round radicchio or Treviso for this recipe. Experiment with different cheeses like brie, gorgonzola, or fontina for varying flavors.
