Vegan Date and Walnut Truffles with Coconut

A lovely happiness-inducing vegan snack with just 4 natural ingredients.

This simple vegan truffle recipe consists of 4 of nature’s simplest, tasty ingredients: dates, walnuts, almonds, and coconut. Dates are a rich source of fiber, iron, potassium, and other nutrients- and they also serve as a versatile ingredient in cooking & baking. Feel free to substitute the walnuts in this recipe for other nuts such as macadamia nuts, pistachios, etc.

The final result? A tasty, energy-rich snack that provides you with nature’s best vitamin: happiness.

Recipe:

1 Cup of Dates, pitted and chopped

1/2 Cup of Walnuts

1/2 Cup of Almonds

1/2 Cup of Organic Shredded Unsweetened Coconut

Instructions:

Take 1 Cup of pitted dates, and chop into small pieces. Set aside in a bowl and mash well (or use a food processor).

After step 1, ground up 1/2 cup walnuts and 1/2 cup almonds in a food processor. Pulse well until the nuts are ground up into small pieces.

Mix in nuts with the date mixture with your hands. After the ingredients are well-mixed, roll the date-nut mixture into small golf-size balls.

Spread the coconut onto a plate or tray, and roll date-nut balls in the coconut until well-coated.

Store in a cool area and enjoy!

  1. How many does this recipe make? Do these taste just like Arden’s Garden’s Fuzzy Kisses (which have raisens listed as first ingredient – not sure if that means it has more raisens than dates). Those are delish!
